Rollin’ Thunder Chili
serves 10-12
4lbs stew meat
2 large packages of Williams Chili seasoning
1 medium coarsely chopped green bell pepper
1 medium white/red onion (1 cup)
2 cloves garlic
1 chopped jalapeno pepper (seeds included)
1 can black beans
1 can red kidney beans
1 can brown beans
3 cans Rotel chunky tomatoes/green chilies
3 cans tomato sauce
1 cayenne pepper
Garlic Salt
Coarse ground black pepper
cup Worcestershire sauce
Cut stew meat to bite size and place in glass baking dish. Add Worcesershire sauce. Sprinkle 1 package chili seasoning on the meat. Add garlic salt and coarse ground black pepper to taste. Add one clove of finely chopped/minced garlic. Marinate 2-4 hours.
Drain mixture add cup coarsely chopped onion and brown meat in skillet. Place in pot and add coarsely chopped bell pepper, cup coarsely chopped onion, 1 clove finely chopped/minced garlic, Rotel tomatoes, tomato sauce, 1 package chili seasoning, 1 crushed cayenne pepper and simmer over medium heat 30-45 minutes. Add beans, chopped jalapeno and cook until meat is tender.
